Summer salads


With the British summer finally appearing ( about time ) I thought I would share with you four of my favourite salads which are perfect for lunch in your gardens, side dishes at bbqs, picnic dates or just a quick and easy dinner while it’s too hot to slave over a hot cooker. All the salads have fruit in them to make them super summery, and I’m a big fan of fruit in my meals, a big fan!


Strawberry & blue chesse

  • Large handful of spinach
  • 200g Strawberries, halved
  • Half an avocado, diced
  • 40g Of your favourite blue cheese
  • Quarter of a small red onion, thinly sliced
  • Handful of your favourite seeds ( I use pumpkin and sunflower seeds )

Mix together and enjoy.


Halloumi & peach

  • 100g Halloumi, sliced
  • 6 spears of asparagus
  • 1 courgette, sliced in to long strips
  • 2 handfuls of salad leaves
  • 1 peach, destoned and sliced
  • Quarter of a red onion, sliced
  • Handful of cherry tomatoes
  • Juice of a lemon
  • Drizzle of olive oil

Grill or griddle halloumi, courgette and asparagus. Put together dry ingredients and dress in lemon juice and olive oil and enjoy.


Parma ham, mozzarella & pineapple

  • Half a avocado, sliced
  • 5 strips of Parma ham
  • 200g pineapple, sliced
  • 50g mozzarella, sliced
  • Handful of cherry tomatoes
  • Two handfuls of salad leaves

Mix together and enjoy, the pineapple is sweet and juicey enough not to need a dressing but if you do want one just try a drizzle of olive oil.


Beetroot, goats cheese & walnut

  • Two large handfuls of rocket
  • 100g roasted beetroot, diced
  • 60g goat cheese
  • 30g Chopped walnuts
  • Drizzle of walnut oil.

Layer ingredients together rocket, beetroot, goats cheese and walnuts then drizzle in walnut oil.

    I could happily eat all of these, just minus the cheese and ham. I do love me a nice salad, especially with some beetroot.

      They were so yummy, I wanted to share healthy food that isn’t expensive with loads of crazy foods that you won’t use again xx
