5 Yummy Hot Chocolates

Its that time of year again, hot chocolate season is now upon us! This is my absolute favourite time of year, I love the dark nights and getting home from work, putting my pjs on and getting cosy with a big mug of hot chocolate. So I thought I would share some of my favourite hot chocolate recipes with you. Warning :- They are super yummy!

Nutella Hot Chocolate!

To make four mugs you will need:-

4 cups low fat/skim milk
2 tablespoons Nutella
2 tablespoons unsweetened cocoa powder
2 tablespoons natural sweetener of choice/raw sugar
Some extra optional toppings:
Crushed hazelnuts
Chocolate chips
Extra Nutella

You will need to :-

Heat milk in a medium sized saucepan on medium – high heat until beginning to warm and steam. Add the spread, cocoa powder and sugar, and whisk until dissolved and combined. Bring to a gentle simmer while stirring, and take off heat.

Serve with your desired toppings.

Strawberry white hot chocolate!

To make four mugs you will need:-

12 oz strawberries, fresh or defrosted from frozen
1/4 cup granulated sugar
3 cups milk
6 oz pure white chocolate, finely chopped
1 tsp vanilla extract
Pinch salt
Red food coloring (optional)
Whipped Cream for Topping

You will need to :-

Place fresh or frozen strawberries (with the stems cut off) in a large bowl. Sprinkle sugar over the strawberries, and toss to combine. Allow to sit for about 10 minutes, until they begin to release their juices.
Blend or puree the strawberries until smooth. Pour through a sieve or cheesecloth to remove all seed. You should have about 3/4 cup puree.
Over low heat, bring the milk to a simmer, whisking constantly. As soon as bubbles begin to appear on the outside edge of the milk, remove the pan from heat. Stir in chopped white chocolate and mix until smooth.
Add in the berry puree, vanilla extract, and pinch of salt and stir until combined. If you want the drink to have a deeper pink color, add in 1-2 drops of red food coloring (completely optional).
Top with whipped cream and enjoy!

Salted caramel hot chocolate!

To make one mug you will need:-

250ml full fat milk
50g finely chopped dark chocolate
75g best quality unsalted butter
50 g soft light brown sugar
50 g caster Sugar
50g golden syrup
125ml double cream
half to one-and-a-half teaspoons fleur de sel

To make the caramel sauce:-

Melt butter, sugars and syrup and butter in a small heavy based pan and let simmer for 3 minutes, swirling every now and again.
Add cream and half a teaspoon of fleur de sel salt (not table salt!) and swirl again, give a stir with a wooden spoon and taste – go cautiously so that you don’t burn your tongue – to see if you want more salt before letting it cook for another minute on the stove. Wait til slightly cool and put into a jug or jar.

To make the hot chocolate you will need to:-

To make a mugful, put 250ml full fat milk into a small saucepan with 50g finely chopped dark chocolate, or 50g of dark chocolate drops and 3 x 15ml tablespoons of salted caramel sauce. Cook, stirring over medium heat, until chocolate is melted and you have a rich hot liquid to pour into a waiting mug. If you want you could dollop whipped or squirty cream over the top, drizzling that with squiggles of salted caramel sauce.

Classic hot chocolate!

To make four mugs you will need:-

600ml milk
142ml pot double cream
100g chopped chocolate

You will need to:-

Pour the milk, double cream and chopped chocolate into a pan. Bring gently to the boil, whisking until smooth. Serve in individual cups or mugs topped with mini marshmallows and a little grated chocolate.

Peppermint hot chocolate!

To make four/six mugs you will need:-

200g bar plain chocolate, broken into chunks
600ml milk
150ml pot single or double cream
Sugar, to taste
6 peppermint candy canes, to serve

You will need to:-

Put the chocolate in a pan with the milk. Gently heat, stirring until all the chocolate has melted. Continue heating until the milk is steaming, then remove from the heat and stir in the cream.
Divide the hot chocolate between 4/6 mugs, add sugar to taste and hang a candy cane on the edge of each. Pass the mugs round and let everyone stir their hot chocolate with their candy cane – letting as much of the sweet peppermint dissolve as they fancy.
Now sit back and enjoy!
