By now you should have finished Mondays cake and are now desperate for more and I wont let it be said that I don’t deliver, so to celebrate the second half of national cake week I have another recipe for you try out. So call your mum, best friend, partner and furry babies and have a catch up over this yummy cake, technically its a super food ( well it does have blueberries in! ). You will need…….
- 225g self-raising flour sifted
- 165g caster sugar
- 125g unsalted butter softened
- 1 tsp vanilla extract
- 2 medium eggs
- 125ml milk
- 1 eating apple cored
- and thinly sliced
- 1 x 250ml cup fresh or frozen blueberries (about 150g)
- 2 heaped tbsp demerara sugar
Preheat the oven to 160C fan/180C/gas 4. Place the flour, sugar, butter, vanilla, eggs and milk in the bowl of an electric mixer and beat until just combined.
Spoon the mixture into a greased 22cm springform tin lined with nonstick baking paper. Top with the apple and blueberries and sprinkle with sugar.
Bake for 45-50 minutes or until the cake is cooked when tested with a skewer. Serve with vanilla ice cream.
