Blueberry porridge squares

I have found the most delicious baking recipe ever for you and if that wasn’t enough it’s really healthy and good for you. If you read my blog regularly than you will know I’m seriously addicted to cake ( seriously addicted ) and I know it’s no good for me but sugar is like crack!! But I’m really trying to cut back and the easiest way for me to cut back is to trick my mind by replacing cake for cake.

Don’t roll your eyes yet these delicious blueberry porridge squares are not only sugar free but dairy free too, totally vegan friendly and absolutely yummy. So yummy in fact I ate the entire tray within 20 minutes. Now if you have more self control than me then these would make the most perfect breakfast on the go or treat in your lunch box. I will be making more for a great energy bar for a pre workout snack.

Ingredients

  • 300g of jumbo oats
  • 225g of blueberries added to the blender + 60g of blueberries stirred through
  • 225ml of oat milk (or any other plant based milk)
  • 1 and a 1/2 teaspoons of vanilla powder
  • 115ml of maple syrup

Preheat the oven to 180C/gas mark 4 and grease a brownie tin with a small amount of coconut oil

Add all the ingredients to a food processor except for the 60g of blueberries, which are to stir through later. Pulse everything a few times until the mix is nicely combined, but not totally smooth. 

Transfer the mix to a bowl and stir through the extra blueberries. Then pour everything into the greased tray 

Bake the mix for about 15 minutes, until the middle is cooked- you may need an extra few minutes

Leave to cool, before slicing into squares and enjoy with your favourite people or do like me and eat all the evidence before anyone notices.
