Chocolate whoopie pies


A couple of days ago I realised that I had forgotten to buy a Christmas present so I rummaged through cupboards for ingredients and decided to make some homemade goodies instead of fighting my way through crowded shopping streets.


1 Large egg
150g Caster sugar
75g Butter, melted
150g Creme fraiche
1tsp Vanilla extract
2tbsp Milk
200g Plain flour
75g Cocoa powder
1/2tsp Bicarbonate of soda

115g Unsalted butter
200g Icing sugar
1tsp Vanilla extract
Milk ( optional )


Preheat the oven to 180c/gas mark 4. Line 2 baking sheets with baking parchment.

Whisk the egg and caster sugar together until thick and light in colour. Beat in the butter, creme fraiche, vanilla extract and milk.


Sift together the flour, cocoa powder and bicarbonate of soda. Beat into the egg mixture until smooth.

Insert a large nozzle into a piping bake, then fill the bag with the mixture and pipe walnut sized balls on the paper sheet, space apart and bake for 10-12 minutes. Leave to cool on the baking tray for a few minutes before moving to a wire rack.

For the buttercream filling, cream together the butter, icing sugar, add the vanilla extract and milk if needed. Sandwich the whoopie halves together with the buttercream.


Now you have a quick and easy present for those last minute panics or a lovely treat for yourself.
