Looking for something a little different to the same old sponge cake, why not try a zebra cake with its beautiful stripes.
4 large eggs
250g Golden caster sugar
250ml Sunflower oil
1tsp Vanilla extract
475g Self raising flour
1tsp baking powder
25g Cocoa powder
Butter for greasing
Preheat oven to 180c/350f/Gas mark 4, Butter a 9in cake tin.
Put the eggs and sugar into a large bowl, add the milk, vanilla extract, oil and 175g of the self raising flour. Whisk until smooth.
Pour half the mixture into a separate bowl and stir in half a teaspoon of baking powder and 175g of flour and set a side. In the other bowl mix in the cocoa, 125g of flour and half a teaspoon of baking powder.
Spoon two tablespoons of the plain mixture into the centre of the cake tin, straight away spoon two tablespoons of the chocolate mixture on top. Continue doing this until all the mixture has been used. Don’t worry if it’s not neat.
