Summer fruit pavlova

I absolutely adore meringue but have spent my entire life too scared to try, there seems to be a lot of meringue related horror stories but with a free afternoon I thought I would try and I ended up with a tasty pavlova.


4 Egg whites
250g Caster sugar
1 tsp White wine vinegar
1 tsp Cornflour
1 tsp Vanilla extract
700g Mixed summer berries of your choice, I got mine hereĀ
3 tbsp icing sugar
350ml Double cream

Heat oven to 150c/130c fan, gas mark 2. Using a pencil mark out the circumference of a dinner plate onto baking parchment.

Whisk the egg whites until they form stiff peaks, then whisk in the sugar, 1tbsp at a time, until the meringue looks glossy. Whisk in the vinegar, cornflour and vanilla.

WP_20150905_3291WP_20150905_6554Spread the meringue inside the circle, creating a crater in the middle. Bake for one hour, then turn off the heat and let the pavlova cool completely inside the oven.

WP_20150905_8315When the meringue is cool, chop 200g of your fruit, add 2 tbsp of icing sugar. Place in a food processor and blitz until smooth. Whip the cream with the remaining icing sugar and spread over the meringue. Put the remaining fruit on the cream and finally pour the sauce over the whole meringue.
