Bakewell cake

I’m a big big fan of bakewell tarts, unfortunately the icing is usually too much for me to handle so imagine my excitement when I found a cake with all the flavour of a bakewell tart but none of the icing.

Ingredients

150g Unsalted butter
150g Caster sugar
3 Eggs
1 Tsp almond extract
100g Ground almonds
80g Self raising flour
200g Blackberries
30g Flaked almonds

Preheat oven to 180c or gas mark 4. Grease and line a 20cm tin.

Cream the butter and sugar together until pale and fluffy. Add the eggs, almond extract, ground almonds and self raising flour, mix well.

Spread evenly in tin, scatter blackberries over the mixture, followed by flaked almonds.

Bake in oven for one hour.
